I guess White almost feels obliged to play the Greek Gift sacrifice on move 11 because there's no black knight which can get to f6 and so it "must work". But in this case it doesn't quite work if Black defends correctly.

Yes, although only 4 out of the 10 games I've had after 10...O-O have continued with Bxh7+, and only 17% in the Lichess database (compared to 65% O-O). Maybe they've been burned before! It is a nice little trap though, which honestly I might fall for myself as White if I didn't know any better.
